Palm Beach chef Clay Conley, a seven-time James Beard Award nominee, has created create a custom inflight menu for a West Palm Beach-based shared-charter aviation company.
For a partnership with Slate Aviation, which offers flights between South Florida and the Northeast, Conley and his team at Buccan restaurant in Palm Beach have prepared a menu that includes a baby kale salad, burrata Caprese sandwich, turkey club sandwich, Italian sandwich and a Maine lobster roll.
Conley told the Daily News that creating a menu for Slate Aviation — the new marketing name for Tri State Charter — has been “a fun, new challenge.”
“It’s exciting to see Buccan served at 40,000 feet,” he said.
For Slate Aviation, offering Buccan’s fare on its 18-seat all-business-class aircraft delivers a “special, personalized experience for our guests,” co-CEO Heather Maguire said.
People from South Florida, she said, “know no culinary experience more special than Buccan.”
The menu for Slate by Conley and his team at Buccan, 350 S. County Road, also includes a variety of complimentary beverages and cocktails from Conley’s Buccan Sandwich Shop.
Food and beverage items can be pre-selected by Slate’s ticketed passengers up to 48 hours in advance of their flight.
The Buccan/Slate menu now is available on flights to and from Palm Beach and Fort Lauderdale international airports and Nantucket. It will be added to northbound routes between South Florida and New York this summer, according to a news release.
Flying Slate’s aircraft offers private terminal departures from several airports, a news release said. Bookings are available at flyslate.com, or the Slate mobile app on the App Store or Google Play.
